So, we’re not suggesting that you rush out and drink your Christmas Tree once the festivities are done… but… Pine needle tea has actually been drunk for centuries by people in Scandinavia, the baltic regions and parts of Europe too. It’s full of vitamin C and other nutrients too, and was used as a vitamin boost and also to help fend off illness (such as colds and flu). The best time to pick the leaves is when they are fresh and vibrant green in Spring, and you can really taste the sourness of the Vitamin C if you chew them too. However, we thought it would be fun to spice up some pine needles with Juniper berry, ginger root, cloves and citrus peel, to create this merry mix which not only smells divine, but is good for you too.

Instructions: Take 1-2 teaspoons per cup of boiling water, and infuse for a minimum of 4 minutes. Strain and enjoy! (We like to add a slice of fresh lemon too, for extra zest and vitamin C.
